Zucchini Pizza Bites

Zucchini slices replace pizza dough in these little appetizers.  They are fun snacks to make with children.

2-3 med.-sized zucchini or yellow summer squash, cut into ½-inch rounds (24 slices)

Extra-virgin olive oil

Salt and freshly ground black pepper

2/3 c. well-seasoned tomato sauce

¼ c. freshly grated Parmesan cheese

¼ c. grated mozzarella cheese

4-6 mushrooms, sliced

6-8 black olives, sliced

Preheat oven to 425 F.  Brush both sides of the zucchini slices with the oil and arrange on a baking sheet.  Sprinkle with salt and pepper to taste.  Roast for 7 min., or until slices are just tender when pierced with a fork.  Meanwhile, in a small bowl, combine tomato sauce, mozzarella, and Parmesan.  Add salt and pepper to taste.  Spread on spoonful  of tomato sauce mixture on each zucchini slice.  Top each zucchini slice with one mushroom slice and one olive slice.  Return baking sheet to oven and roast until cheese is melted and sauce is heated through, 2-3 min.  Serve hot.  Serves 4-6.
